In 12 inch ovenproof non-stick skillet, over medium heat, saute bacon until lightly browned. Remove bacon and liquid from skillet. Over medium heat, saute apples and onions in oil about 5 minutes or until soft and golden. Stir in bacon.
Preheat broiler. Meanwhile in large bowl, whisk together parsley, eggs, cream and salt. Pour over apple mixture and cook about 2 minutes, or until lightly golden on bottom. Season with salt and pepper. Transfer skillet to oven, on middle rack, and broil 2 to 3 minutes, or until golden.
Serves 12.
