     Lemon Poppy Seep Muffins

Ingredients
1 3/4 Cups All Purpose Flour
3/4 Cup White Sugar
1 1/2 Teaspoons Baking Powder
1/2 Teaspoon Baking Soda
1/2 Teaspoon Salt
1 Tablespoon Lemon Zest
1 Tablespoon Poppy Seeds
1 1/4 Cups Buttermilk
2 Tablespoons Butter, melted
 
1 Large Egg

Instructions
Preheat oven to 400 degrees. Line muffin tin with paper liners.
Lightly spoon flour into dry measuring cups and level with a knife. Combine flour and next four ingredients in a medium bowl, stir well with a wisk. Stir in Lemon zest and poppy seeds.
Make a well in the center of the muisture. Combine buttermilk, butter and egg and stir well with a wisk. Add flour mixture, stirring just until moist.
Spoon batter into muffin cups, filling 2/3 full. Bake 400 degrees for 20-25 minutes, until golden brown. Cool in pan 5 minutes and then remove to a wire rack until completely cool.
