     Cornbread Dressing

Ingredients
4 pound hen
1 box Ballard corn bread mix
1 stick butter
3 large chopped onions
3 large chopped bell peppers
1 bunch diced green onions
2 cans chicken broth
Frank Davis' Poultry Seasoning, to taste
Paul Prudhomme's Poultry Seasoning, to taste
 
Tony Chacherie's Seasoning, to taste

Instructions
Boil chicken until tender. While chicken is cooking, prepare corn bread, per instructions.
In a pan, saute' onions, celery and bell peppers in a stick of butter. Season. Remove chicken from pot and set broth aside to cool. Remove chicken skin and de-bone. Cut chicken into bite-sized pieces.
Add corn bread and chicken to vegetable mixture. Place dressing in a baking dish and sprinkle wih Tony Chacherie's Seasoning.
Cook dressing at 250 degrees for one hour. Keep dressing moist while cooking by adding more broth if necessary.
Serving Suggestions
Serve warm
