Ingredients
4 sticks butter
2-1/2 cups self-rising flour
 

Instructions
In a large heavy saucepan over medium heat, melt butter. Add flour while continuing to stir. Stir until mixture becomes a smooth past. The roux will be yellow as it takes on the color of the butter.
Cook on medium heat for five minutes.
Serving Suggestions
Use for etouffees.
