     Spinach Madeline with a Millennium Makeover

Ingredients
2 packages frozen chopped spinach
4 tablespoons butter
2 tablespoons flour
2 tablespoons chopped onion
1/2 cup evaporated milk
1/2 cup reserved spinach liquor
1/2 teaspoon black pepper
3/4 teaspoon celery salt
6 ounces Kraft Velveeta cheese, cut into small pieces
 
red pepper, to taste
3/4 teaspoon garlic powder
1 teaspoon Worcestershire sauce
2 tablespoons chopped jalapeno peppers

Instructions
Cook spinach according to directions on package. Drain very well and reserve liquid. In a medium saucepan, melt butter over low heat. Add flour, stirring until blended and smooth, but not brown. Add onions and saute 3 to 5 minutes or until wilted. Add evaporated milk, spinach liquid and Worcestershire slowly, stirring constantly to avoid lumps. Add seasonings and cubed cheese. Stir until melted and combined with cooked spinach.
This may be served immediately or put into a casserole and topped with buttered bread crumbs. The flavor is improved if the latter is done and kept in refrigerator overnight. Bake in 350 degree F oven until bubbly.
