     Baked Egg Cups

Ingredients
12 eggs
12 slices of deli ham
1/2 cup parmesan cheese (or your favorite)
1/2 cup diced scallions
sea salt, to taste
pepper, to taste
 

Instructions
Preheat oven to 400 degrees. Spray a muffin tin with cooking spray. Lay a piece of ham in each hole, creating a little ham cup. Crack one egg into each hole and sprinkle with salt and pepper. Bake eggs for twelve minutes until white is firm. Remove each egg from tin and top with grated cheese and scallions.
