     Crabmeat Au Gratin

Ingredients
1 medium onion
1 1/2 ribs of celery
1/4 pound butter
2 tablespoons of flour
9 ounces evaporated milk
1 egg yolk
1 pound crabmeat
5 ounces Velveeta
 

Instructions
Melt butter. Add flour and stir continuously for five minutes to make a blonde roux. Add celery and onion and cook until vegetables are limp. Add evaporated milk and egg yolk. Add cubed Velveeta and stir until blended. Add crabmeat. Pour into casserole dish. Bake at 350 for 20 minutes.
