1 bunch fresh asparagus, with thick stalks, ends trimmed, cut in 2 inch pieces
1 to 2 pounds new potatoes, cut into thirds
olive oil
3 cloves garlic, sliced
1 tablespoon dry Italian seasoning
sea salt
fresh black pepper
1-2 tablespoons fresh basil chopped
fresh Parmesan cheese, grated for serving
Instructions
Preheat oven to 400 degrees. In a large bowl, toss asparagus, potatoes, two to three tablespoons olive oil, garlic, italian seasoning, salt and pepper. Massage oil and seasonings into vegetables. Grease a roasting pan. Roast vegetables for 35 - 45 minutes until tender. Garnish with herbs and Parmesan cheese.
