     Trish's Christmas Meatballs

Ingredients
2 lbs. lean ground beef
1 1/2 lb. lean ground pork
4 mild Italian sausage
2 tsp. kosher salt
15 grinds cracked pepper
1 Tbl. dried oregano
2 tsp. garlic powder dried
1/3 cup dried onion flakes
1/3 cup dried parsley flakes
 
1 cup Italian bread crumbs, or whatever variety you have on hand
3 eggs
1/4 c. dried basil
Oil for frying

Instructions
Mix pork and beef together in large bowl. Add all other ingredients to meat and mix with hands until all ingredients are thoroughly mixed.
Heat oil over medium to medium-high heat in a large skillet. Form meat into 2 to 2 1/2-inch balls. It helps to use a standard ice cream scoop to ensure all balls are similar in size and cook evenly. Put in hot oil and brown on all sides. For a less messy option, balls may be placed on a rack on a baking sheet and baked at 400 degrees for 20 minutes.
Remove meatballs from oil (or oven) with a slotted spoon and gently place into sauce (see recipe for Trish's Christmas sauce). Cook with the sauce until ready to assemble lasagna.
