     Alfajores or Butter Cookies with Caramel Frosting

Ingredients
1/3lb. butter
1c. sugar
1 egg
2 egg yolks
1 1/4t. vanilla extract
2t. grated lemon rind
1 1/2c. cornstarch
1/2c. flour
1t. baking powder
 
1T. brandy
FROSTING
2c. milk
3/4c. sugar
1t. vanilla extract
Dash baking soda
1c. fresh or dried grated coconut

Instructions
Preheat oven to 325F. Cream butter. Add sugar and continue creaming. Add egg and yolks. Beat until light and foamy. Add vanilla and rind. Sift cornstarch, flour, baking powder together. Add to butter mixture. Mix well. Add brandy. Knead until smooth. Set aside for 10 minutes.
Roll dough to 1/2 inch thickness on lightly floured board. Cut cookies into desired shapes. Place on buttered cookie sheet. Bake 20 minutes, until lightly browned. Set aside to cool. Frost with caramel frosting.
Frosting- Combine milk, sugar, vanilla and baking soda in saucepan. Bring to boil. Cook over low heat 2-1/2 hours, until mixture forms soft ball when dropped in cold water. Stir occasionally. Spread frosting over cookies. Sprinkle with coconut OR make cookie sandwiches rolling the sides in coconut.
