     Slow Cooker Refried Beans

Ingredients
1 onion, peeled and quartered
2 cups dry pinto beans, rinsed and soaked overnight-
1/2 fresh jalepeno or other hot pepper, seeded and chopped (opt.)
2 cloves garlic, minced
1-2 tsp salt
1/2 tsp black pepper
one big pinch cumin
6 cups water
 

Instructions
Combine all ingredients in slow cooker.
Cook on high for about 4-5 hours. (-Double the cooking time if the beans have not been soaked first.)
Remove the onion chunks and drain the excess liquid. If desired, save excess liquid to add until the final product is the desired consistency.
Mash the beans with a potato masher.
Serving Suggestions
Optional- Top with shredded cheddar cheese, and/or fresh chopped green onions.
