Add 1 cup rice with 2 cups water in pot, cover and
cook on low for 20 minutes until completed. While
rice is cooking, dice onions, garlic, and scallions.
In a saucepan, melt butter. Add onions and cook on
low until translucent. Add onions and mix. Add 2
eggs to same pan. Scramble and mix with onion.
Pour rice into sauce pan, add scallions, and mix.
Add 1/4 cup of soy sauce and mix. Sprinkle with salt
and pepper. Let simmer on low heat for 5 minutes for
flavors to mix.
Additions- Can marinate chicken with soy sauce, cook
on george foreman grill, chop and add to the rice
for a full meal.
