     Chicken Cacciatore

Ingredients
3 pounds cut chicken
1/4 to 1/2 cup olive oil
1 large onion, thinly sliced
1 clove garlic, finely chopped
2 1/2 cups tomatoes (I use stewed tomatoes)
1/2 tsp. salt
1/4 tsp. pepper
1/2 cup white wine
 

Instructions
Brown chicken in hot oil. Add onions and garlic and cook until yellow. Add tomatoes, salt and pepper. Cover and cook slowly until chicken is tender and tomatoes are reduced to a thick sauce, about 30 minutes. Add wine, cook 10 minutes more.
Serving Suggestions
Serve over spaghetti, Sprinkle with shaved parmesan cheese
