     Rustic Tomato Soup

1 Tablespoon Olive Oil
4-5 Cloves of Garlic, minced or pressed
1-2 Tablespoons Basil
Crushed Red Pepper Flakes, to taste
1 cup Vegetable Broth
1-8 oz Can of Tomato Sauce
1-15.5 oz Can of Diced Tomatoes, undrained
Black Pepper, to taste
Plain Yogurt or Sour Cream (optional)

Combine oil and garlic in a saucepan and cook over medium-low heat for about 5 minutes.
Add the basil and crushed red pepper flakes and allow to cook for about one minute.
Add the remaining ingredients. Cover and simmer for 15 minutes. If desired, stir yogurt or sour cream into soup just before serving.
