In a large mixing bowl dissolve yeast in warm water. Add buttermilk, sugar, shortening, eggs, salt, baking soda, and 2 cups of flour. Beat until smooth Stir in enough of remaining flour to form a soft dough.
Turn onto a floured surface; kneed until smooth and elastic. Divide into 18 pieces. Roll each into 9 inch rope; coil each end of the rope toward the center in opposite directions. Place 3 inches apart on a greased baking sheet. COver and let rise in a warm place until doubled (about 40 minutes)
In a small bowl, whisk egg and water, brush over rolls. Bake at 350 for 15-20 minutes or until golden brown remove from pan to wire rack for cooling.
