     Low-Fat Lemon-Honey Drop Cookies

Ingredients
7 tablespoons butter
1/2 cup granulated sugar
2 tsp grated lemon rind
1/3 cup honey
3/4 tsp lemon juice
1 egg
1 3/4 cups all purpose
1 tsp baking powder
1/2 tsp salt
 
1/4 cup vanilla fat free yogurt
-Glaze-
1 tbsp lemon juice
2 tsp grated lemon rind

Instructions
Beat butter, sugar, and lemon rind util fluffy. Add honey, juice, and egg; beat until well blended. COmbine dry ingredients, stir with whisk. Add flour mixture to sugar mixture alternately with yogurt, beginning and ending with flour mixture. Drop by tablespoon scoop onto ungreased nonstick cookie sheet. Bake 8 minutes at 350 degrees.
Combine powdered sugar, juice, and rind in small bowl; stir with whisk. Brush glaze evenly over hot cookies. Remove from pan; cool on wire racks. (Makes 24 cookies)
