     Chili Sauce

Ingredients
6 quart basket tomatoes
2 lb onions chopped (or more)
1-2 stocks of celery chopped
2 c sugar
2 c vinegar
1 1/2 T pickling salt
2 T pickling spice tied in cheese cloth
1/4 tsp red pepper or to taste
 

Instructions
Wash tomatoes an place in boiling water for 30 seconds till the skins split an come off easily. Core and chop rough. Add all other ingredients and bring to a boil. Turn temp down to a simmer and cook stiring often.
When mixture reaches the right consistancy place in scalded jars and tighten lids finger tight. The flavor will improve with a bit of ageing in a cool dark place.
