      Carrot Pudding the Fav of Burke's

Ingredients
1 1/4 c grated raw carrots
1 1/2 c grated apple
1 1/4 c flour
2 tsp baking powder
1 tsp salt
1/2 tsp cloves
1/2 tsp nutmeg
1/2 tsp cinnamon
1/4 c butter
 
1 c brown sugar packed
1 c seedless rasins
1/4 c grape or apple juice
1 tsp baking soda
! c maraschino cherries sliced in two

Instructions
Grate carrot and apple. measure and set aside. Reserve a T of the measured flour to dust the rasins. Sift the remaining flour baking powder salt cloves nutmeg and cinnamon together 3 times.
Cream butter and brown sugar beating wellafter each addition. Add dry ingredients alternating with the juice blending well after each addition. Add grated carrot and half of the grated apple and floured rasins.
Disolve baking soda in remaining gated apples and add at the end mix lightly.
Pour into greased 1 1/2 quart mould or casserole dish. Cover tightly with foil and the lid and steam 4 1/2 to 5 hours.Serve warm with warm sauce.Sauce recipe is on site
