     Stuffed Cherry Tomatoes

Ingredients
1 7 to 8oz container of feta cheese cut into small cubes (1/2 inch)
2 T olive oil
1 T minced shallot
1/2 tsp fresh oregano chopped
1 lb pound lg cherry tomatoes approx. 12
12 pitted kalamatra olives cut in half lengthwise.
 
Instructions
Toss cubed feta with oil shallot and oregano. Cut tomatoes in half and scoop out centre. Stuff with marinated feta and slide in a slice of olive.
