In a large skillet, heat oil and butter together, saute chopped onion. Add nutmeg. Stir. Take off heat, blend in spinach, cream cheese and milk - stir to incorporate. Add more milk if necessary if mix gets too thick.
Spread in baking dish, cover with parmesean, and bake for 30 minutes at 350 degrees, or until brown on the edges and bubbly.
As an added treat, if you like texture, sprinkle crispy onions on top, bake for final 5 minutes, and serve.
