     Banana Nut Bread (High Altitude)

Ingredients
2 cups flour
1 tsp soda
1 tsp salt
1/2 cup chopped nuts
1/2 cup shortening
3/4 cup sugar
2 cups ripe bananas
2 eggs
 

Instructions
Cream shortening and sugar. Beat eggs first until foamy then add to sugar and shortening. Add mashed bananas, mix nuts with dry ingredients and add flour in 3 additions to mixture. Pour batter into greased pan. Bake at 350 degrees for 1 hour and 10 minutes. Remove from oven and immediately loosen bread from pan and turn onto wire rack to cool.
