     Bacon Jam

Ingredients
1 1/2 lb thick cut smoked bacon
1 large yellow onion - sliced
1 smal red onion sliced
4 large cloves of garlic - chopped
2 Tbl. apple cider vinegar
1/4 C maple syrup
1 Tbl brown sugar
black pepper to taste
tsp Tobasco Sauce
 
1 Tsp Allspice
1 C. strong brewed coffee

Instructions
Crisp bacon and sit aside to drain. Cut into 1 - 2 inch pieces. Brown onions in the bacon fat. Then add in garlic. cook unti soft.
Add coffee, maple syrup, brown sugar, tobasco, allspice, black pepper, and vinegar. Stir until boil, then turn down heat to simmer for approxiametely 2 hours. You want it to be thikc and wet, but not soupy.
Let cool for 30 minutes. Put into a food processor and pulse on high a couple of times for a couple seconds.
Serving Suggestions
With Eggs or as a bacon spread in a BLT. Anywhere that calls for bacon
