     Spicy Portuguese Potatoes

Ingredients
8-9 medium potatoes to fill 9x11 dish
3/4 t garlic powder
1/2 t dried parsley
2 t paprika
3 T red wine vinegar
2 c water approx
1/4 red wine
3 t hot red pimento paste or piri piri sauce
(portuguese sauce found in italian/portuguese grocers)
 
roasted chicken fat

Instructions
These potatoes are to die for! Made up this recipe from trial and error, but you need to roast or rotisserie a chicken at the same time because you need chicken fat for the ultimate potatoes. Takes 3 hours total. Heat oven at 350F. Peel potatoes and quarter them. Place in an oven safe 9 x 11 dish. Sprinkle on spices. Add wet ingredients and pimento sauce. Water should be level with potatoes. This is a mild-medium spicy so adjust as necessary. Cover with foil.
Place in the oven for an hour. After, remove foil turn down the heat to 300F, baste the potatoes with the sauce and place in the oven for an additional 2 hours uncovered. Baste the potatoes a few times in this time frame. In the mean time cook your roasted chicken and save the fat.
Add the fat in the last hour of cooking the potatoes. Voila roasted chicken with spicy portuguese potatoes.
