1/4 c. clear french salad dcressing with spices & herbs (See recipe below)
4 to 5 medium potatoes, cooked in jackets, peeled and cubed (4 cups)
1 c. chopped celery
1/4 c. chopped onion
4 hard cooked eggs, sliced
1 tsp. salt
1/2 c mayonnaise
1 tsp. celery seed (optional)
Instructions
Pour French dressing (Recipe below) over warm potatoes; chill for 2 hours. Add celery, onion, eggs and salt. Add mayonnaise and mix carefully. Chill 4 hours.
CLEAR FRENCH DRESSING RECIPE
1/2 C. salad oil
2 Tbsp vinegar
2 Tbsp lemon juice
1 tsp. sugar
1/2 tsp. salt
1/2 tsp.paprika
1/2 tsp. dry mustard
dash cayenne
Combine dressing ingredients in a jar. Cover and shake well before using in salad recipe above.
