     Smoked Pork Shoulder

Ingredients
18-20 lb pork shoulder
1 recipe Hog Injection
3 c Basic Barbecue Sauce
1 c apple juice
1 recipe Hog Glaze
 

Instructions
Remove any visible fat. Square up sides and place in aluminum pan. Inject with 2-3 quarts of the Hog Injection all over in 1'' squares.Let sit loosely covered in the fridge 2 hours. Turn shoulder upside down in the pan so that any excess injection that might remain infuses the meat. Let sit upside down 15-20 min. Heat smoker to 250°. Take shoulder out of pan and sprinkle rub all over. Put back in pan and cook in the smoker 3 hours.
Remove from smoker and pour apple juice into a clean aluminum pan. Transfer shoulder to this pan. Cover with foil and put back in smoker. Cook 6 hours or until temperature is 205°. Remove from pan and brush hog glaze all over both sides. Return to uncovered pan. Smoke 1 hour, while adding no more heat to the smoker and allowing the internal temperature of the smoker to drop. The shoulder will have its resting period during this time.
