     English Pea Salad

Ingredients
2 large packages frozen peas (4-8 cups)
1 medium yellow onion, finely chopped
1 large, or 2 medium blocks cheddar cheese, cubed
1 lb bacon, cut up and browned until crispy
4 Tbsp white wine vinegar
3-4 hardboiled eggs, whites only, diced
1-1 and 1/2 cups mayo
1 Tbsp chopped fresh mint
Salt and Pepper to taste
 

Instructions
Adapted from The Homesick Texan- Thaw and rinse peas; place in large bowl. Cut up and crisp the bacon, let cool, add to peas. Finely chop up at least 1/2 of onion (you may use entire onion if you desire); add to peas. Cut up in small cubes the cheddar and add to peas. Mix all with at least 4 Tbsp of cider vinegar and toss in mayo and mint (finely chopped).
You may wish to use less mayo, or more mayo, pending your taste. I usually start off with 1 cup, to ensure all ingredients are coated, and add more if I want. Chill for at least 1 hour before serving. If you feel daring, finely dice 1/2 of a jalapeno and add. Provides a bit of kick.
