     Primal Jambalay

Ingredients
2 chicken breasts, cut into bite size pieces
1 lb andouille sausage, cut into ¼'' pieces
¼ c olive oil
1 c onion, chopped
1 bell pepper, chopped
2 cloves garlic, minced
14.5 oz can diced tomatoes, undrained
1½ c chicken stock
¼ tsp dried thyme
 
1 tbsp fresh italian parsley, chopped
1 tsp chili powder
1 head cauliflower
2 c raw shrimp, shelled and deveined
salt and pepper

Instructions
Heat oil in skillet and lightly cook sausage and chicken over med. heat. Add onion, bell pepper, and garlic and saute until onion becomes translucent. Transfer to a large pot. Add tomatoes, chicken broth, thyme, parsley, and chili powder and bring to a simmer. Cook 20 min. uncovered, stirring occasionally. Process cauliflower to the consistency of rice. Add to pot and cook 15 min. Add shrimp and simmer 5 min. Add salt and pepper.
