     Chicken Stock

Ingredients
1 chicken or chicken pieces (with bone)
1 onion, cut into fourths with peel on
1 carrot, coarsely chopped
1 stalk celery, coarsely chopped
1 sm. bunch italian parsley
few sprigs fresh thyme
few sprigs fresh sage
a few celery leaves
2 bay leaves
 
OPTIONAL-
garlic
mushrooms
leeks
black peppercorns

Instructions
Cut off big chunks of fat from chicken. Put in large pot and add the rest of the ingred. Cover with cold water and bring to a boil. Simmer 3 hours, adding water as necessary. Strain. Do not add salt to stock, instead add to recipe as you use stock.
