     Fried Chicken

Ingredients
Bowl of water
Salt
Buttermilk
Hot sauce
All purpose flour
cayenne pepper
paprika
onion powder
garlic powder
 
thyme
rosemary
head of garlic
Oil for frying
1 lemon

Instructions
In a large bowl put 2 TBSP of salt and put cut up chicken to soak in bowl for 30 minutes. While soaking get 3 containers. One you will put buttermilk and hot sauce to taste. The second you will put flour, onion powder, garlic powder, cayenne pepper, paprika, salt and pepper. Mix those with fork. The third with the same flour mixture again. Drain chicken after 30 minutes. Dredge in flour then buttermilk then flour again. Let dry for a few minutes on platter.
Put enough oil in a pot for deep frying. Before heating add head of garlic, thyme and rosemary whole do not chop. After heated to 375 F remove all herbs. Fry chicken until inside has no pink near bone about 12 minutes longer for larger pieces. Garnish chicken with herbs then squeeze one lemon on top before serving.
