     Lemon Filling

Servings   2 cups

Ingredients
1 1/2 cups sugar
1/4 cup cornstarch
1/4 tsp salt
1 1/2 cups cold water
4 egg yolks
2 tsp grated lemon peel
1/2 cup lemon juice
2 tbsp butter
 

Instructions
In a saucepan combine sugar, cornstarch and salt. Gradually add water and whisk until blended. Whisk in egg yolks, lemon peel and lemon juice. Cook over medium heat whisking constantly until thick and bubbly. Continue heating 1 minute remove from heat stir in butter. Cool to room temperature without stirring.
