     Carmel Popped Corn

Ingredients
8 Cups popped yellow corn
3/4 Cup packed brown sugar
6 Tablespoons butter
3 Tablespoon light corn syrup
1/4 Teaspoon salt
1/4 Teaspoon soda
1/4 Teaspoon vanilla
 

Instructions
Preheat oven to 300 degrees. Pop corn and remove unpopped kernals. Put into a 9 X 12 baking pan.
Measure brown sugar, butter, syrup and salt into a sauce pan. Cook over medium heat, stirring constantly, until mixture boils. Boil, without stirring, for five (5) minutes.
Romove from heat. Stir in soda and vanilla. Pour over popped corn and stir to coat. Bake at 300 degrees for 15 minutes. Remove from oven and stir thoroughly. Return to over for an additional 5 to 10 minutes, watching carefully so it does not burn.
Remove from pan and break into kernals. Serve immediately or store in ziplock bags or plasticware. Cleaning the pan will seem daunting; however, just fill it with hot water and allow it to sit for a few minutes; the caramel will simply dissolve and clean up is a breeze.
