Melt chocolate over water bath. Add butter and
stir until melted 100 F. Combine egg yolks and
sugar and heat over water bath until 110 F. Whip
until thick. Combine egg whites and sugar heat
over water bath until 110 F then whip until peaks.
Whip heavy cream and vanilla to soft peaks
refrigerate. Quickly and carefully fold into
melted chocolate mixture the yolk mixture then the
white mixture then the whipping cream. Use to
fill cake layers.
