Preheat oven to 350. Beat cream cheese, sugar and vanilla with mixer until well blended. Add eggs; mix just until blended. To make a plain cheesecake, pour into a graham cracker crust and bake for 35-40 minutes or until center is almost set (should be a little jiggly).

To make a white chocolate raspberry cheesecake, melt 6 oz white chocolate chips and add to batter after mixing in the eggs. Pour into crust then melt 3 tbsp raspberry preserves in the microwave 15 sec or just until melted. Dot spoonfuls on top of unbaked cheesecake and swirl with a knife. Bake.

To make turtle cheesecake mix batter for plain cheesecake. Melt 1 bag of Kraft Caramel Baking Pieces with a splash of milk in the microwave until melted, stirring often. Pour caramel into the crust (reserve some caramel to drizzle on top after baking) sprinkle with chopped pecans. Pour filling over caramel, bake. When cooled drizzle caramel (remelt in the microwave) and chocolate sauce on top and add pecan halves or chopped pecans
