Filling- Combine dates, granulated sugar, salt and water in a sauce pan and cook over medium heat until mixture thickens to spreading consistency. Stir well. Remove from heat and stir in lemon juice and chopped walnuts. Chill.
Dough- Cream together shortening or butter, and sugars. Add beaten eggs and vanilla. Beat until light and fluffy. Blend in flour, soda, salt, and cinnamon. Chill dough. Roll and chill again. Cut rolls 1/4-inch thick. Bake at 375°F for 10-12 minutes.
