     Moroccan Lentile Soup

Ingredients
3/4 red lentils
4 3/4 c water
1 package Knorr minestrone soup mix
1 garlic clove, minced
2 teaspoons cumin
1 (19 oz) can drained chickpeas
1/4 c parsley or cilantro, chopped
 

Instructions
Rinse lentils, then drain. In large saucepan, combine lentils, water, soup mix, garlic and cumin. Bring to boil, stirring occasionally. Reduce heat and simmer 15 minutes, stirring occasionally. Add chickpeas; simmer another 5-10 minutes or until lentils are tender. Garnish with chopped cilantro or parsley.
