     Potato Chip Cookies

Ingredients
1 pound softened butter - 4 cubes
1 Cup granulated sugar
2 teaspoons vanilla
3 1/2 Cups flour
3-4 Cups of coarsely crushed Original Lays potato chips.
(do not use ridged or other hard chips)
Powdered sugar for dusting
 

Instructions
Using electric mixer cream butter and sugar until very light - 2-3 minutes. Add vanilla. Blend. Add flour 1 cup at a time until blended. Add potato chips. At this point I like to add the potato chips by hand - not use the electric mixer. if you crush the chips while still in the bag and then blend into the dough using a large spoon the chips stay coarsely crushed. If you use the mixer for this step - it kinda pulverizes them - and the cookie is less crunchy.
Use un-greased cookie sheets - or cookie sheets lined with parchment paper. Using a Tablespoon gather approximately 1 to 1/1/2 tablespoons of dough- do not form into balls - using your forefinger ease the dough off of the spoon and just lightly press down on the middle of the dough with your finger.
Bake @ 325 for 15-20 minutes or until golden brown on the edges. Cool completely on the cookie sheet. Dust with powdered sugar using a small sifter.
