     Devil-icious Egg White Salad

Ingredients
4 C. finely chopped cauliflower (about 1 head)
1 C. fat-free mayonnaise
4 wedges laughing cow cheese
2 T. yellow mustard
1/2 t. paprika, or more for garnish
1/4 t. salt
1/4 t. black pepper
12 hard boilded egg whites, chopped
1 C. chopped celery
 
1 C. chopped cucumber
1/2 C. chopped scallions
1/4 C. sweet relish

Instructions
Place cauliflower in large microwave-safe bowl with 1/3 C. water. Cover and microwave until soft, 6-8 minutes. Once the bowl is cool enough to handle, drain any excess water.
Transfer half of the cauliflower to a blender or food processor. Set aside remaining cauliflower. Add to blender- mayo, cheese, mustard, paprika, salt and pepper. Puree or pulse until blended. Set aside.
To the bowl add all remaining ingredients. Gently stir. Add puree from blender and lightly stir to coat.
Cover and chill or at least one hour.
