     Garlic Chicken Linguine

Ingredients
1/4 cup olive oil
1 tbsp olive oil
1/4 cup minced garlic
3/4 lbs linguine
1 1/2 lb skinless, boneless chicken
2 poblano chiles, seeded and cut
3 plum tomatoes, seeded and diced
1/4 cup thinly sliced basil
4 oz prosciutto, chopped
 
2 tbsp butter
1 cup grated Parmesan cheese

Instructions
Heat 1/4 cup oil in skillet over medium heat; Add garlic and saute until golden brown. Strain oil in glass measuring cup; reserve garlic. Add more oil to measure 1/4 cup again.
Cook linguine al dente. Heat remaining oil in skillet and saute chicken for 5 minutes. Add poblanos and saute 2 minutes. Add tomatoes basil, prosciutto and garlic until chicken is cooked. Remove from heat
Add butter and stir until melted. Put linguine, chicken mixture and 1/2 cup Parmesan in large bowl and toss. Season with salt and pepper.
Sprinkle with remaining basil, garlic and Parmesan.
Serving Suggestions
Add peas or mushrooms
