Halve roma tomatoes. Remove seeds and toss with 2
tbsp olive oil, salt and pepper. lay on foil-lined
sheet pan, skin side up. Bake at 350 for 20-25
minutes, turning every 10. Remove and peel skin and
let cool.
Fold tomato, goat cheese and basil puree in chicken.
Place chicken on lined sheet. Spread mayo on top of
chicken and sprinkle with pistachios. Bake at 350
for 10-25 minutes.
