     Cajun Hoppin' John Lagniappe

Ingredients
1 pound dried black-eyed peas
3 cups vegetable broth
10 ounce can Ro-tel tomatoes
1 onion, chopped
2 green onions, chopped
1 bell pepper, chopped
2 stalks celery, chopped
3 cloves garlic, minced
1/2 teaspoon Creole seasoning
 
2 links andouille sausage, sliced

Instructions
Cover black-eyed peas with water and soak overnight. Drain and put peas into slow cooker. Add vegetable broth, Ro-tel tomatoes, onion, green onions, bell pepper, celery, garlic and Creole seasoning. Add andouille and cook on Low for 6-8 hours. Serve over cooked rice.
