Preheat oven to 375 degrees

Open and pour lemon cake mix into large mixing bowl. Add eggs, oil and lemon extract to cake mix. With mixer on low speed, stir until cookie dough is well blended.

In a separate small bowl, measure the confectioners sugar. Use a cookie scoop to scoop out round balls of lemon cookie dough. Drop each ball of cookie dough into confectioners sugar. Roll the ball of dough until lightly covered in confectioners sugar. Place each cookie onto ungreased cookie sheet.

Bake for 8 - 10 minutes until tops of cookies are very light brown. Do not overcook. Remove from oven and let sit on cookie sheet for about one minute. Yields 2 dozen.

Remove cookies onto cooling rack. When completely cool, store in an air tight container. These freeze very well. Enjoy!
