Fry curry paste in pan for 1 minute. Add coconut milk and 200ml water, bring to the boil. Simmer for 5min until slightly thickened.
Add mushrooms and simmer for 2 more minutes. Stir in drained noodles, beansprouts and most of chilli and spring onions then heat for another minute. Serve scattered with the rest of the chilli and spring onions.
