Heat oil in skillet on medium heat. Add dried noodle nests to pan and brown. Watch carefully so they do not burn.
Add chopped onions and garlic and cook. Cover noodles in pan with tomato sauce and one can of water. Add seasonings and put lid on pan, but not completely covering the pan, to let some steam escape. Cook.
If you like onion, add quarted onions to the pan. If you like fresh tomatoes, can add quartered fresh tomatoes at this point too.
Boil, as water goes down, add more water until noodles are cooked and sauce has thickened slightly. DO NOT STIR. Carefully serve each nest on a plate with sauce over the top.
