     Roasted Cuy (Guinea Pig)

Ingredients
2 large animals
2 red onions, chopped
4 cloves of garlic, crushed
2 tsp cumin
1 tsp white pepper
2 tsp salt
2 tbsp water
2 tbsp oil
annatto coloring
 

Instructions
Mix ingredients well and spread over the inside and outside of the animal. Before roasting, remove excess marinade to avoid scalding. Put on grill, turning manually. Continue to apply lard to keep meat from drying out.
Serving Suggestions
Serve with rice or boiled potatoes and peanut sauce.
