     Lean Turkey Stuffed Peppers

Ingredients
2 large Red Bell Peppers
1 cup chopped tomatoes
1/2 cup chopped scallions
12 oz lean ground turkey
1 Tbsp Olive Oil
1/2 tsp cumin
1/2 tsp pepper
2 tsp chopped garlic
2 oz lowfat cheese of choice
 

Instructions
Preheat oven to 375 degrees. Take bell pepper and remove top and scrape out all seeds. Heat olive in pan on medium-high and add in scallions, garlic and turkey for 2-3 minutes. After turkey is cooked reduce heat to low and add in tomatoes, cumin, cheese and pepper. Stuff this mixture into red bell pepper and bake at 275 for 30 minutes or until pepper is tender. Remove and enjoy! Makes 1 serving.
