     Cilantro-Grilled Chicken Sandwich

Ingredients
2 tbsp. cilantro
2 tbsp. chopped onion
2 tbsp. chopped sweet red pepper
2 tbsp. chopped tomato
Dash of ground red pepper
1 tbsp. lime juice
1.5 tsp. olive oil
1.5 tsp. low-sodium soy sauce
1 clove garlic
 
2 boneless skinless chicken breasts
PAM
2 green lettuce leaves
4 slices reduced fat Italian bread, toasted

Instructions
Blend first 9 ingredients.
Place 2 tbsp. of cilantro mixture aside. Cover chicken in remaining cilantro mixture and marinate at least 4 hours or overnight.
Grill chicken on George Foreman.
Place lettuce leaf on each of 2 bread slices. Place chicken on lettuce, spoon on remaining cilantro mixture.
