     Houston's canadian cheese soup

Ingredients
1 cup carrots(minced)
1 cup yellow onions(minced)
1 cup celery (minced)
1/4lb margarine
1/2 cup flour
3 cups chicken broth
3 cups half & half
2lbs velveeta cheese(cut in small chunks)
1tbsp. fresh parsley (chopped fine)
 

Instructions
Melt margarine in large skillet, add all vegetables at once and saute until soft
add flour and stir, cook until it begins to turn a light brown color. add chicken broth - at medium heat whisk until a thick base is formed add half & half, dont let it boil
add cheese to soup stirring until melted
add 1tbsp chopped parsley before serving
