     apple streusel muffins

Ingredients
1/2 tsp baking soda
10 oz jar applesauce (original)
4 tbsp butter, softened
1/2 cup brown sugar
1 large egg- lightly beaten
1 1/4 cups self-rising white flour
1/2 tsp ground cinnamon
1/2 tsp nutmeg
 
1/3 cup all purpose flour
1/4 cup brown sugar
1/4 tsp ground cinnamon
1/4 tsp nutmeg
2 1/2 tbsp butter

Instructions
First make the topping. Put the flour, sugar, cinnamon, and nutmeg in a bowl or in the bowl of a food processor. Cut the butter into small pieces, then either rub it in by hand or blend in the processor until the mixture resembles fine bread crumbs. Set aside while you make the cupcakes
Add baking soda to the jar of applesauce and stir until dissolved. Put butter and sugar in a separate bowl and beat until light and fluffy. Gradually beat in the egg. Sift in the flour, cinnamon, and nutmeg and fold applesauce mixture into the batter.
Spoon batter into paper cases and then sprinkle the topping over each cupcake to cover the tops. Then press down gently.
Bake the cupcakes at 350 for 20 minutes or until golden. Then let cool for 2-3 minutes.
