     Baked Egg puffs

Ingredients
non stick spray
2 large eggs
4 large egg whites
1/2 cup butternut squash puree
2 TBSP shredded cheddar
2 TBSP flour
1/2 tsp baking powder
1/4 tsp salt
 

Instructions
Preheat oven to 400. Coat 4 coffee cups with spray and set on baking sheets.
Whisk the eggs, egg whites, squash, cheese, flour, baking powder and salt until combined. Divide mixture into 4 cups and bake until the tops are puffed up and the eggs are no longer runny on the center. About 13 to 15 minutes.
