     Muffins

Ingredients
1 1/2 cups UNflour
3/4 teaspoon xantham gum
1/2 cup sugar
1/2 teaspoon salt
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
3/4 cup milk (or milk substitute)
1 egg
4 tablespoons butterslightly softened
 

Instructions
Choose the type of muffin you want to make from the choices below. Preheat oven to 350 degrees. Combine dry ingredients in bowl of mixer.
While mixing o low add wet ingredients and any additional ingredients according to your miffin choice below. Mix on high 1 minute. Fill greased muffing cups. (or tins lined with cupcake papers) just over half full. Bake at 350 degrees for about 30 minutes or until muffing tets clean with a toothpick.
BLUEBERRY MUFFINGS- Add 1/2 cup dried blueberries or 1/2 cup canned blueberry pie filling and only 1/3 cup milk. APPLE CINNAMON MUFFINGS- Add 1/2 teaspoon cinnamon and 1 apple peeled and grated.
BANANA MUFFINS- Add 1 small, ripe banana mashed. LEMON POPPYSEED MUFFINS- Replace the milk with a 6oz cup of lemon yogurt (or 3/4 cup lemon yogurt) and add 2 teaspoons poppyseeds, a 2.9 oz package of lemon cook and serve pudding mix, and 1/4 cup lemon juice.
